Declaimer: You can use whatever vegetable that appeals to you, and you can add whatever seasoning that you feel is suitable, my point is you are free to customize as you want. This is my recipe and this is how I find it suiting to make my favorite street food at home.

PROCEDURE FOR MAKING SHAWARMA AT HOME

To start you have to marinate your chicken breast and for this, you will be needing a bowl.

  • Add your finely sliced chicken breast in the bowl.
  • Add all the seasoning in the right proportions (salt to taste, Chicken seasoning, Garlic, Ginger and garam masala).
  • Mix till they are properly incorporated.
  • Add your yoghurt and stir.
  • cover and leave to rest in the fridge for 5 to 6hrs. Personally, I prefer marinating overnight.
  • Cook on a pan that is lightly greased with oil.
  • Allow to cook until tender, avoid adding any form of liquid.
Another method I use in cooking my chicken is by piling them the same way the shawarma sellers do. For this, we will be needing one large potato and a Bamboo Skewer Stick.

  • Start by preheating your oven to 200°C.
  • Cut the side of the potato, to enable it to stand on its own.
  • Insert your Bamboo Skewer Stick on the raw potato and place them on your baking pan like so.

  • Insert your chicken breast on the Bamboo Skewer Stick till you have no chicken breast left.

FINAL STAGE OF MAKING SHAWARMA

To incorporate my shawarma, I will be placing my already made tortillas on a piece of parchment paper while on a flat surface, In which I will be adding two tablespoons of ketchup and a tablespoon of mayonnaise. With another spoon, I will mix the two creams on the surface of the bread.
Then I will go on to add some vegetables, in my case, it's cabbage and carrot, once this is done  I will be adding some of my finely sliced chicken breast and a finger of my slightly roasted sausage. The final stage is to wrap everything together, after which I will be placing it on a hot drill to take some heat for at least 15 minutes. Serve your shawarma hot and enjoy the works of your hands, Buon Appetito.

Yes, I know it's time-consuming but I would rather make mine at home than to end up in the hospital for diarrhoea.
